Single Malt Whisky

Distilled, matured and bottled by Weetwood

Driven by a love of single malt and our 30 years brewing ales with malted barley, it was a natural step for us to begin whisky making in 2018. We wanted to challenge the belief that a good single malt needs to be produced in Scotland and requires 10 years’ aging.

We’ve pulled on the timeless traditions of whisky making for inspiration, but we are not held back by them. And so at every stage of the production process for our unique whisky, a journey of many years from barley to bottle, we go to great lengths to generate flavour and character. It is the opposite of mass-produced and has resulted in awards and acclaim since the first release in 2022.

Single malt whisky from the heart of rural Cheshire

Every aspect of the whisky production process is done by our own team on our site in the heart of Cheshire. We start with a tonne of premium English malted barley, mash this with our own soft Cheshire water, pitch yeast and slowly ferment. The result is 4,000 litres of ‘wash’ which we gently distil to create a creamy, new make spirit. This is then laid down to mature in casks for at least 3 years. Cask choice is critical and for all our whiskies, we start maturation in small, specially prepared American oak quarter casks. These are shaved, toasted and re-charred to our specification and when filled, are stored in different environments at our rural site to enable aging by our seasons – cold winters, warm summers. Losses to ‘angel’s share’ are significant, but the character the spirit picks up is well worth it. We finish the whisky in carefully selected casks, generally European oak, before cutting to bottle strength, lightly filtering and bottling.

Our whisky reflects Cheshire's history of evolution

Our whisky is rooted in Cheshire and we’re proud to display this through our premium branding and packaging. This reflects both Cheshire’s famous black and white buildings and, through the blue and yellow tiles, the colours in the Cheshire flag.

Awards and Releases

The Cheshire’s exceptional craftsmanship, character and commitment to quality was rewarded with a silver medal at the 2025 International Wine & Spirit Competition (IWSC) one of the world’s most respected and influential spirits competitions. Awarded to spirits demonstrating outstanding complexity, balance and refinement the judges’ tasting notes were: – “decadent aromas of chocolate biscuit, dried fruit and damson lead to a sweet palate, rich with notes of cherry jam, toast and leafy berry notes. A warm, spiced finish.”

The Cheshire received a Gold at the highly-respected London Spirits Competition 2025 impressing judges with outstanding quality, balance and character earning high marks for taste, value and packaging and competing against some of the world’s most exceptional spirits.
